Job Requirements
- Ability to work from a standing position for extended periods
- Ability to perform reaching, stooping, and/or crouching motions repeatedly
- Dexterity in hands and fingers to manipulate tools and utensils
- Visual abilities including closeness and depth perception for quality and safety
- Sense of smell and taste needed to ensure quality food preparation

Job Qualifications
- Proven record of culinary accomplishments through personal recognitions
- Basic reading, writing, mathematical, and computer skills
- At least 5 years of high-volume cooking experience with extensive knowledge in fine dining
- At least 3 years experience as an Executive Chef in a hotel or fine dining restaurant
- Strong interpersonal, verbal, and written communication skills for culinary training
- Leader, trainer, and motivator of staff
- Even-tempered with a reputation for consistency and fairness
- Organized and able to meet deadlines
- Good judge of people and situations
- Ability to handle many details and a heavy volume of events
- Neat, well-groomed, and highly professional
- Exceptional guest/customer service skills
Job Duties
- Review and approve recipe files and discuss improvements with culinary staff
- Use high-quality food items creatively prepared and presented cost-effectively
- Approve food orders from central commissary for special order items
- Review finished products for quality to ensure consistency with culinary standards
- Oversee kitchen appearance, cleanliness, and safety
- Ensure proper maintenance and operation of kitchen equipment according to health and company standards
- Troubleshoot unexpected kitchen situations
- Manage proper disposal of kitchen waste
- Oversee menu creation, production, and ordering for special events
- Price menu, catering, and seasonal items while adhering to food and cost control guidelines
- Develop seasonal specials and approve all seasonal menu and pastry items
- Conduct product taste panels with Food & Beverage Management
- Participate in culinary events and competitions
- Ensure food costs meet budgetary goals through purchasing and waste control procedures
- Discuss daily food cost reports with key kitchen and F&B staff
- Ensure invoices are coded and prices updated weekly
- Monitor kitchen payroll in line with business forecasts and budget
- Interview and hire kitchen staff and manage staffing adjustments
- Review weekly schedules to meet forecasts and budgets
- Train and motivate culinary staff to meet food preparation standards
- Provide positive leadership and counseling
- Delegate to develop supervisors and subordinates to meet goals
- Cooperate with management team and complete projects assigned by the GM
- Maintain grooming and uniform standards
