Job Requirements
- Minimum 5 years high-volume cooking experience
- At least 3 years as Executive Chef in hotel or fine dining
- Basic reading, writing, math and computer skills
- Ability to work standing for long periods
- Ability to perform repetitive reaching, stooping and crouching
- Dexterity to manipulate kitchen tools
- Visual acuity for quality and safety
- Sense of smell and taste for food preparation
- Wear closed toe, non-canvas, non-skid shoes as required
- Demonstrate leadership and team motivation skills
Job Qualifications
- Proven record of culinary accomplishments through personal recognition
- Basic reading, writing, mathematical and computer skills
- Minimum 5 years high-volume cooking experience, especially in fine dining
- At least 3 years experience as an Executive Chef in a hotel or fine dining restaurant
- Strong interpersonal, verbal and written communication skills for culinary training
- Leadership skills including training and motivating staff
- Even-tempered with consistency and fairness
- Well organized and able to meet deadlines
- Good judgment of people and situations
- Ability to handle details and heavy volume of events
- Neat, well-groomed and highly professional
- Exceptional guest and customer service skills
Job Duties
- Review and approve recipe files and discuss improvements with culinary staff
- Use high quality food items that are creatively prepared, presented and flavorful
- Review and approve food orders from central commissary for special items
- Frequently review finished products for quality prior to leaving the kitchen
- Oversee kitchen appearance, cleanliness and safety
- Ensure kitchen equipment is properly maintained following health department standards
- Troubleshoot unexpected situations in the kitchen
- Ensure proper disposal of kitchen waste
- Oversee menu creation, production and ordering for special events
- Price menu, catering and seasonal items adhering to food and cost control guidelines
- Develop seasonal specials and approve menu and pastry items
- Schedule and conduct product taste panels as required
- Participate in culinary events and competitions
- Ensure food costs meet budgetary goals by managing purchasing, storage and waste
- Discuss daily food cost reports with key kitchen and food and beverage staff
- Ensure invoices are coded and prices updated weekly
- Maintain and monitor kitchen payroll within budget
- Interview, hire and adjust staffing as needed
- Review weekly schedules to meet forecasts and budgets
- Train, develop and motivate culinary staff to meet and exceed standards
- Provide positive leadership and counsel employees
- Delegate responsibilities to develop supervisors and subordinates
- Display loyalty, dedication and cooperation within the management team
- Comply with company grooming standards and wear uniform provided
