Job Requirements
- Stand and walk for extended periods up to 8+ hours a day in a fast-paced environment
- Lift, carry, and move objects up to 50 lbs
- Bend, stoop, reach, twist, and perform repetitive hand and arm movements
- Tolerate varying temperatures including hot kitchens and walk-in coolers/freezers
- Use kitchen equipment and tools safely and effectively
- Maintain energy, stamina, and focus during long shifts or special events
- Communicate clearly and effectively with team members, vendors, and guests
Job Qualifications
- 5+ years of progressive leadership experience in food service or culinary operations
- Degree or certification in Culinary Arts, Hospitality Management, or related field, or equivalent experience
- Proven expertise in menu development, food costing, and quality assurance
- Strong knowledge of food safety standards and compliance regulations
- Demonstrated ability to lead and inspire cross-functional teams
- Excellent organizational, problem-solving, and decision-making skills
- Passion for food trends, culinary innovation, and guest satisfaction
- Proficiency in inventory, scheduling, costing, and menu management software
- Prior experience as an Executive Chef
- Excellent verbal and written communication skills
- Strength in training and team building
- Ability to manage multiple property culinary departments
- Experience with 4 or 5 star standards and implementation
- Experience in creating and implementing new successful concepts
Job Duties
- Provide visionary leadership and management of culinary research and development from product creation through implementation
- Devise innovative product offerings for various venues including main dining rooms, buffets, room service, specialty restaurants, banquets, catering, and themed/special events
- Formulate and implement procedural guidelines, policies, and standards for food and beverage operations including menu design, product specifications, cleanliness and sanitation, and cost controls
- Monitor industry trends and collaborate with internal and external partners on culinary research and development
- Manage overall creation of menus, preparation instructions, and dish specifications by ingredients and portion sizes
- Collaborate with Purchasing to identify and source required products
- Develop standards, processes, and tools for consistent culinary product delivery
- Guide culinary team in implementation and adherence to company standards, processes, and systems
- Monitor feedback from guests, partners, and staff and take corrective actions to ensure highest guest satisfaction
- Develop and administer formal quality assurance processes including audits, secret shopper programs, culinary focus groups, tastings, and surveys in partnership with Food & Beverage management
