Job Requirements
- A.S. degree or equivalent culinary experience
- Three to five years of progressive culinary/kitchen management experience
- Strong knowledge of food safety and sanitation practices
- Experience in high volume and complex foodservice operations
- Ability to manage inventory and control food costs
- Must be hands-on with chef responsibilities
- Proficiency with computer applications including Microsoft Office suite
- Ability to work Monday through Friday with weekend and holiday rotations
- ServSafe certification preferred but not mandatory
Job Qualifications
- A.S. or equivalent experience
- Minimum of three to five years of progressive culinary/kitchen management experience
- Extensive catering experience is a plus
- Experience with high volume, complex foodservice operations
- Institutional and batch cooking experience
- Hands-on chef experience
- Knowledge of food and catering trends with focus on quality, production, sanitation, food cost controls, and presentation
- Proficiency with Microsoft Office (Word, Excel, PowerPoint), Outlook, Email and Internet
- ServSafe certification highly desirable
Job Duties
- Plans regular and modified menus according to established guidelines
- Follows standardized recipes, portioning and presentation standards
- Completes and utilizes daily production worksheets and waste log sheets
- Tastes completed meals to ensure quality
- Trains kitchen staff in food preparation, safe handling, operation of equipment, food safety and sanitation
- Establishes and maintains cleaning and maintenance schedules for equipment and work areas
- Maintains inventory of food and non-food supplies to stay within guidelines
- Makes decisions on utilization of leftover food products
- Complies with federal, state and local health and sanitation regulations
- Follows safety policies and procedures including occurrence reporting
- Participates in departmental meetings, staff development, and professional programs
