Job Requirements

  • A.S. degree or equivalent culinary experience
  • Three to five years of progressive culinary/kitchen management experience
  • Strong knowledge of food safety and sanitation practices
  • Experience in high volume and complex foodservice operations
  • Ability to manage inventory and control food costs
  • Must be hands-on with chef responsibilities
  • Proficiency with computer applications including Microsoft Office suite
  • Ability to work Monday through Friday with weekend and holiday rotations
  • ServSafe certification preferred but not mandatory

Job Qualifications

  • A.S. or equivalent experience
  • Minimum of three to five years of progressive culinary/kitchen management experience
  • Extensive catering experience is a plus
  • Experience with high volume, complex foodservice operations
  • Institutional and batch cooking experience
  • Hands-on chef experience
  • Knowledge of food and catering trends with focus on quality, production, sanitation, food cost controls, and presentation
  • Proficiency with Microsoft Office (Word, Excel, PowerPoint), Outlook, Email and Internet
  • ServSafe certification highly desirable

Job Duties

  • Plans regular and modified menus according to established guidelines
  • Follows standardized recipes, portioning and presentation standards
  • Completes and utilizes daily production worksheets and waste log sheets
  • Tastes completed meals to ensure quality
  • Trains kitchen staff in food preparation, safe handling, operation of equipment, food safety and sanitation
  • Establishes and maintains cleaning and maintenance schedules for equipment and work areas
  • Maintains inventory of food and non-food supplies to stay within guidelines
  • Makes decisions on utilization of leftover food products
  • Complies with federal, state and local health and sanitation regulations
  • Follows safety policies and procedures including occurrence reporting
  • Participates in departmental meetings, staff development, and professional programs
