Job Requirements
- Must obtain and maintain all licenses and certifications per Federal, State, and Indiana Gaming Commission
- successfully pass background check
- successfully pass drug screening
- at least 21 years of age
- able to work holidays and weekends with flexible shifts
- prior experience in the gaming industry strongly preferred
- prior experience in tribal gaming preferred
- must have valid Food Handlers Card, Liquor License, and IGC Badge when working
- able to withstand noisy and smoke-filled environments
- able to stand 50 percent of shift, walk 45 percent of shift, and sit 5 percent of shift
Job Qualifications
- Culinary arts degree
- minimum of five years experience in culinary arts
- previous supervisory background in hospitality industry
- banquet and beverage operations experience
- good verbal and written communication skills
- knowledge of federal, state, and local laws and regulations
- understanding of safety and sanitation practices
- demonstrated organizational and budgeting skills
- full understanding of kitchen operations and financials
Job Duties
- Create an atmosphere that induces guests to choose Hard Rock Casino Northern Indiana for gaming entertainment
- oversee daily back of the house and land food and beverage operations
- manage menu development, food quality, preparation, and presentation
- develop and maintain adequate par levels and inventory control procedures
- work with vendors to obtain food quotes and purchases
- oversee food transfers and requisitions for land outlets
- control food and labor costs
- supervise employees' training and development of food quality and safety
- maintain cleanliness and sanitation standards as defined by Health Department guidelines
- supervise back of the house and land food and beverage staff
- conduct performance evaluations and assist in staff development
- attend seminars when needed
