Job Requirements

  • 5+ years of kitchen management or executive chef experience
  • Bachelor’s or culinary degree preferred
  • Experience in high-volume retail, entertainment, hospitality, or restaurant venues required
  • Experience managing and developing teams required
  • Current ServSafe certification required
  • Ability to work standing for extended periods
  • Ability to lift objects with assistance
  • Strong communication skills
  • Ability to adhere to food safety and sanitation regulations
  • Ability to manage budgets and food purchasing
  • Prior banquet or catered event experience desirable

  • Extensive banquet style event experience
  • Experience managing and developing teams
  • Current ServSafe certification
  • ServSafe instructor certification or ability to be certified preferred
  • Highly developed customer service skills
  • Strong interpersonal and communication skills
  • High-level profit and loss management capability
  • Exceptional organizational skills
  • Ability to work in fast-paced environments

Job Duties

  • Adhere to the company’s mandated F&B menu and purchasing programs
  • Maintain budgeted revenue, costs of sales, labor, supplies, and operating cash flow related to food operations
  • Review monthly profit and loss statements and make necessary adjustments
  • Work with Operations and Sales teams to plan, supervise, and execute all events including food and beverage service and cleanup
  • Assist with cooking when necessary
  • Estimate food consumption and make purchases according to the food program
  • Schedule staff efficiently for varying business volumes
  • Recruit, hire, train, and retain kitchen staff including sous chefs and lead cooks
  • Develop key staff members
  • Ensure product quality, freshness, and presentation meet company standards
  • Supervise preparation, portioning, garnishing, and food storage
  • Manage kitchen equipment maintenance and conduct sanitation audits and cleaning schedules complying with Department of Health regulations
  • Report critical issues to General Manager
