Job Requirements

  • education from an accredited institution if degree is presented
  • ability to see and read information, labels, monitors, and identify equipment and supplies
  • ability to communicate clearly and understand spoken information and alarms
  • manual dexterity to manipulate complex equipment precisely
  • physical ability to transport, pull, and push equipment with full range of movement
  • ability to work on hands and knees and bend for setup and troubleshooting
  • remain standing for long periods
  • tolerate temperature extremes and exposure to cleaning chemicals
  • 3 years of culinary leadership experience preferred
  • business and financial acumen in foodservice

Job Qualifications

  • food handler permit or ServSafe certification required by first day of work with ServSafe certification obtained within 90 days if not current
  • demonstrated business and financial skills in restaurant or healthcare foodservice industries
  • creative and appealing recipe and menu development skills
  • strong verbal, written, and interpersonal communication skills
  • proficiency in word processing, spreadsheet, database applications, internet, email, scheduling applications, and computerized tracking systems
  • associate degree in Culinary Arts preferred or equivalent culinary leadership experience as a sous chef or similar within Intermountain Facilities

Job Duties

  • responsible for implementation of and adherence to all system recipes and menus at the facility for patient meal, retail, and catering services to ensure food and meal presentation quality and appearance standards
  • specify and coordinate procurement and inventory of all food products needed at the facility ensuring adherence to the nutrition services managed order guide
  • procure high quality and value in all food purchases while meeting facility budgetary guidelines
  • implement and manage chef and cook staffing models based on facility production volumes to adhere to labor budgets
  • ensure adherence to Joint Commission standards related to kitchen operations, food production safety, sanitation, and temperature maintenance
  • implement system standards for food preparation, equipment use, kitchen safety, kitchen security, culinary skill requirements, and public health safety standards
  • introduce new products, recipes, and trends to the Executive Chefs and leadership team across all focus areas including patient meal, cafe, bistro, and catering
  • work with the facility Nutrition Services Manager to develop emergency and disaster preparedness plans related to food provision
  • advise and guide the utilization of departmental computer-based menu and production management systems for forecasting, production lists, inventory tracking, and recipe costing
  • responsible for culinary skills education of chefs and cooks, and collaborate with the Nutrition Services Manager on HR functions for culinary staff such as hiring, training, mentoring, evaluating, and performance management
  • participate in patient rounding and Patient and Family Advisor Committee activities quarterly
  • collaborate with Office of Patient Experience to adhere to established metrics
  • attend and participate in large scale catered events and local social and media events to promote the service line and organization
