Job Requirements
- 4 or more years of experience
- 4-year degree preferred
- Culinary degree preferred
- Track record achieving business results
- History of leading, motivating, and coaching teams
- Basic financial experience
- Ability to effectively and thoughtfully advise, counsel, coach, resolve conflict, and negotiate within all levels of an organization
- Knowledge of order of service and proper placement of table settings including china, glass, flatware, food, and beverage as per kitchen tickets and guidebook
- "Win together" mentality
- Basic proficiency with MS Office Product Suite, advanced proficiency preferred
- Role requires standing, bending, climbing stairs, and lifting and carrying 35 pounds
- Willingness to work a flexible schedule based on needs, including evenings, weekends, and holidays

- Physical ability to stand, bend, climb stairs, and lift up to 35 pounds
- Willingness to work flexible hours including evenings, weekends, and holidays
Job Duties
- Monitor and document daily food inventories to minimize food waste and control food costs
- Maintain necessary skills of all kitchen roles to fill in for positions as needed
- Ensure compliance with all health and sanitation standards set by Neiman Marcus Group, local, federal, and third-party auditors
- Check daily readiness of cook stations for service
- Oversee maintenance and cleanliness of all dining rooms and kitchens
- Guide restaurant to achieve and maintain a 90 percent or better score on seasonal shop reports and sanitation evaluations
- Create daily specials and soups, instruct kitchen stations on roles
- Monitor, organize, and expedite all plates leaving the kitchen
- Manage inventory amounts and month-end forecasts
- Complete food and supplies orders following Corporate Purchasing Contracts
- Maintain current and accurate paperwork from POS reports while monitoring restaurant success relative to the bottom line
- Manage plating to ensure plates are delivered according to set specifications
- Plan, execute, and support special promotions and events
- Maintain professional relationships with restaurant vendors
- Coach and counsel kitchen and restaurant Associates
- Train kitchen staff in respective areas of responsibility
- Communicate daily with restaurant management team regarding scheduling, finances, and employee concerns
- Partner with Regional Director of Restaurants and General Restaurant Manager to ensure smooth operations
