Job Requirements
- minimum of five years kitchen management or executive chef experience
- relevant culinary or bachelor’s degree preferred
- extensive experience in high-volume retail, entertainment, hospitality, or restaurant environment
- ability to manage banquet style events
- demonstrated leadership in managing and developing culinary teams
- current ServSafe certification
- willingness to obtain ServSafe instructor certification if not already held
Job Qualifications
- five plus years of kitchen management or executive chef experience
- bachelor’s or culinary degree preferred
- experience in high-volume retail, entertainment, hospitality, or restaurant venue required
- extensive experience in banquet style events
- experience managing and developing teams
- current ServSafe certification required
- ServSafe instructor certification or ability to be certified preferred
Job Duties
- adhere to the company’s mandated food and beverage menu and purchasing programs
- maintain budgeted revenue, costs of sales, labor, supplies, and operating cash flow related to food operations
- review monthly profit and loss statements and make adjustments as necessary
- work with the Operations team and Sales staff to plan, supervise, and execute all events, including preparation, service, and cleanup
- assist with cooking when needed
- estimate food consumption and make purchases appropriately from specified food programs
- schedule staff efficiently to meet business volume changes
- recruit, hire, train, and retain kitchen staff including sous chefs and lead cooks
- develop key staff members
- ensure product quality, freshness, and presentation meet company standards
- supervise food preparation, portioning, garnishing, and storage
- facilitate and manage kitchen equipment maintenance
- conduct sanitation audits and cleaning schedules complying with Department of Health regulations
- report critical issues to the General Manager
