Job Requirements

  • Minimum 2 years culinary education preferred
  • 3-5 years experience in similar position required
  • advanced knowledge of food principles and practices
  • proficient in human resources management
  • excellent knowledge of back of house systems, ordering, and inventory
  • strong communication skills
  • ability to meet deadlines
  • available to work all shifts including weekends, nights, holidays, and on call
  • proficiency in Microsoft Office applications
  • knowledge of automated inventory and purchasing systems
  • experience in bar operations preferred
  • able to obtain and maintain Kentucky gaming/racing license

Job Qualifications

  • Culinary education of 2 or more years preferred
  • 3-5 or more years experience in a similar role required
  • advanced knowledge of food profession principles and practices
  • proficient in human resources management
  • excellent knowledge of back of house systems, ordering, and inventory

  • proficiency with Microsoft Outlook, Excel, and Word
  • aptitude for learning automated inventory and purchasing systems

  • able to obtain and maintain a valid Kentucky gaming/racing license

Job Duties

  • Plan and direct food preparation and culinary activities consistent with the brand and annual plan
  • ensure high quality food and beverage to guests while maintaining cost to an acceptable level
  • maintain cleanliness and organization in the kitchen
  • emphasize food diversity and quality in appropriate presentation
  • direct and manage staff of culinary and stewarding teams
  • develop new recipes, plan menus, and perform administrative tasks
  • hire, train, and coach staff to maintain efficiency and professionalism
  • train staff in safe operating procedures for equipment and machinery
  • establish and review staffing levels to maintain budgeted employment
  • enforce company policies, procedures, safety, and health regulations
  • monitor service delivery, ticket times, and production schedules
  • establish and oversee recipes for menu items
  • develop prep and production schedules
  • control food costs and manage inventory and portion control
  • maintain equipment according to manufacturer’s instructions
  • develop budgets and business plans in coordination with F&B team
  • coordinate menu improvements and pricing
  • collaborate with marketing for VIP events and promotions
  • maintain relationships with management and vendors
  • handle customer feedback and complaints
  • perform other duties as assigned
