Job Requirements

  • degree or diploma in culinary arts or related field preferred
  • minimum 5 years of culinary management experience
  • familiarity with food safety and sanitation regulations
  • strong financial acumen in food cost control and inventory management
  • ability to work varied shifts including weekends and holidays
  • excellent leadership and interpersonal skills
  • proactive recruiting and training abilities
  • ability to handle fast-paced environment
  • commitment to quality and guest satisfaction

  • proven culinary leadership experience
  • strong menu development skills using local and seasonal ingredients
  • ability to manage kitchen operations including procurement and cost controls
  • experience in mentoring and developing kitchen staff
  • knowledge of food safety regulations and sanitation standards
  • proficiency in labor management and scheduling tools
  • excellent communication and teamwork skills
  • front of house experience preferred

Job Duties

  • consistently offers professional, engaging and friendly service
  • oversee daily operations of the kitchen department including banquets, outlets, in room dining, staff cafeteria and stewarding
  • responsible for the execution of the hotel's strategic plan as it relates to all culinary areas
  • role model our service promises and ensure all reporting departments focus on delivery of service essentials
  • develop and prepare menus balancing creativity and guest requests with leading edge presentation and food quality
  • maintain food and beverage standards through standardized recipes and safe food handling
  • optimize profitability by monitoring inventory, food cost controls and promotional initiatives
  • use labor management tools to set and monitor staffing and productivity targets
  • prepare weekly schedules ensuring productivity maximization
  • maintain staffing levels through proactive recruiting
  • ensure timely and consistent performance management and colleague training
  • actively participate in development and implementation of kitchen and restaurant capital projects
  • participate in weekly operational meetings including banquet event reviews
  • ensure full compliance with hotel operating controls and seek performance improvement
  • oversee menu creation for staff restaurant
  • promote teamwork and maintain strong cross-department relationships
  • participate in media and community opportunities to promote the hotel
  • ensure compliance with hygiene, security and health and safety requirements
  • respond personally to food-related feedback and ensure proper reporting
  • ensure all kitchen equipment is maintained
  • actively participate in department head and food and beverage meetings
  • hold regular departmental communication meetings and support colleague participation in hotel committees
