Job Requirements

  • bachelor's or culinary degree preferred
  • 5+ years of kitchen management or executive chef experience
  • experience in high-volume retail, entertainment, hospitality, or restaurant venue required
  • experience managing and developing teams required
  • current servsafe certification required
  • servsafe instructor certification or ability to be certified preferred
  • ability to walk, bend, and stand for periods of time
  • ability to lift objects with some assistance

Job Duties

  • adhere to the company’s mandated f&b menu and purchasing programs
  • maintain budgeted revenue, costs of sales, labor, supplies, and operating cash flow related to food operations
  • review monthly profit and loss statements and make necessary adjustments
  • work with operations and sales teams to plan, supervise, and execute events, including food preparation, service, and cleanup
  • estimate food consumption and make appropriate purchases
  • schedule staff efficiently to meet business volume
  • recruit, hire, train, and retain kitchen staff, developing key personnel such as sous chefs and lead cooks
  • ensure product quality, freshness, and presentation meet company standards
  • supervise preparation, portioning, garnishing, and storage of all food
  • manage kitchen equipment maintenance
  • implement and conduct sanitation audits and cleaning schedules to comply with local health regulations
  • report critical issues to the general manager
  • support the general manager on all food-related matters
