Job Requirements

  • Minimum 5-7 years progressive culinary leadership experience in full-service hotels, lifestyle hotels, or upscale restaurants
  • Prior experience as an Executive Chef or Executive Sous Chef with multi-outlet and banquet oversight strongly preferred
  • Demonstrated success managing food cost, labor, and inventory in a high-volume environment
  • Proven ability to lead, train, and retain culinary teams while maintaining standards under pressure
  • ServSafe Manager Certification required or ability to obtain immediately
  • Strong understanding of Texas food safety and workplace regulations
  • Flexible availability including early mornings, evenings, weekends, and holidays

Job Duties

  • Own the culinary identity of the hotel, ensuring menus reflect Tribute Portfolio’s lifestyle positioning and the San Antonio Riverwalk market
  • Design, test, and launch menus for all outlets including restaurant, bar/lounge, rooftop, banquets, and in-room dining/market
  • Lead menu engineering, seasonal refreshes, and local sourcing initiatives that enhance guest appeal and profitability
  • Oversee daily kitchen operations across all outlets and events, ensuring consistency in taste, presentation, portioning, and timing
  • Establish and enforce standardized recipes, prep systems, plating guides, and production schedules
  • Partner with the Food & Beverage Director on outlet pacing, service flow, and event execution standards
  • Own culinary-related financial performance including food cost, labor deployment, waste reduction, and purchasing discipline
  • Collaborate on annual budgets, forecasts, and labor models
  • validate performance weekly and course-correct quickly
  • Manage inventory controls, par levels, yield management, and vendor pricing to protect margins without compromising quality
  • Recruit, train, schedule, and lead all culinary team members including sous chefs, line cooks, prep, and stewards
  • Build a strong bench through coaching, performance management, and internal development
  • Set clear expectations around professionalism, cleanliness, teamwork, and accountability
  • Ensure full compliance with local health department regulations, ServSafe standards, OSHA guidelines, and Marriott food safety requirements
  • Maintain audit-ready kitchens at all times and lead corrective actions immediately following inspections or internal audits
  • Enforce proper use of equipment, PPE, chemical handling, and safe food practices
  • Lead culinary execution for all banquet and catering events ensuring BEO accuracy, production timelines, and guest satisfaction
  • Collaborate with Sales and Events teams on menu development, tastings, pricing, and event customization
  • Maintain consistency and quality during high-volume group business and peak demand periods
  • Partner with Purchasing/Vendors to ensure quality, consistency, and contract compliance
  • Coordinate with Engineering on preventative maintenance, equipment needs, and kitchen layout efficiency
  • Align with Rooms and Front Office on VIP amenities, special requests, and guest experience touchpoints
