Job Requirements

  • High school diploma or equivalent
  • Several years of culinary management experience
  • Strong knowledge of food safety regulations and sanitation standards
  • Ability to work varied shifts including weekends and holidays
  • Physical stamina to work in fast-paced kitchen environments
  • Excellent organizational and multitasking abilities
  • Ability to communicate effectively with kitchen and front-of-house teams
  • Proficient in recipe development and cost control
  • Capable of managing inventory and performing line checks
  • Willingness to participate in recruiting and training employees
  • Commitment to maintaining high standards of food quality and service
  • Familiarity with labor management software tools

Job Duties

  • Consistently offers professional, engaging and friendly service
  • Oversee daily operations of the Kitchen department, including banquets, outlets, in-room dining, staff cafeteria and stewarding
  • Responsible for the execution of the hotel's Strategic Plan as it relates to all culinary areas
  • Role models service promises and ensures delivery of service essentials within reporting departments
  • Develop and prepare creative menus suitable to various culinary outlets while balancing creativity and guest requests
  • Maintain food and beverage standards through standardized food recipes and safe food handling practices
  • Optimize profitability through monitoring inventory levels, food cost controls, and innovative promotional initiatives
  • Use labor management tools to set and monitor staffing levels and productivity targets
  • Prepare weekly schedules to maximize productivity and provide hands-on support as needed
  • Maintain staffing levels through proactive recruiting
  • Ensure performance management and colleague training/development occur consistently
  • Participate in the development and implementation of kitchen and restaurant capital projects
  • Engage in weekly operational meetings including banquet event reviews
  • Ensure full compliance with hotel operating controls and continually seek performance improvements
  • Oversee menu creation for staff restaurant ensuring high quality products
  • Promote teamwork within the kitchen and maintain strong working relationships with supporting departments
  • Participate in media and community initiatives to promote food and beverage products
  • Ensure compliance with municipal and state hygiene and security laws and health and safety requirements
  • Personally respond to food-related feedback ensuring proper processes and reports
  • Maintain kitchen equipment in good working order
  • Actively participate in department head and food and beverage meetings and support staff involvement in hotel committees
