Job Requirements

  • Two plus years of post-high school education
  • Five plus years of employment in a related position
  • Experience in hotel kitchen management preferred
  • Knowledge of food safety and sanitation regulations
  • Strong leadership and interpersonal skills
  • Ability to manage budgets and control costs
  • Effective communication skills
  • Availability to work regular hours and comply with attendance rules

Job Qualifications

  • Two plus years of post-high school education, culinary education is desirable
  • Five plus years of employment in a related position
  • Hotel experience preferred
  • Requires advanced knowledge of food profession principles and practices including management of people and food and beverage operations
  • Knowledge of hotel operations including marketing, security, safety, personnel relations, business planning, maintenance, budgeting, quality assurance, hospitality law, and long-range planning
  • Strong leadership skills to motivate and develop staff and achieve goals
  • Ability to work effectively under time constraints and deadlines
  • Effective verbal and written communication skills with ability to adapt communication for different audiences

Job Duties

  • Direct the day-to-day operations of all areas of the kitchen including outlets, banquets, stewarding, and purchasing
  • Manage human resources in the kitchen including interview, hire, train, develop, coach, conduct reviews, resolve problems, and discipline
  • Plan and manage procurement, production, preparation, and presentation of all food in a safe, sanitary, cost-effective manner
  • Monitor and control the maintenance and sanitation of kitchen, equipment, and related areas to ensure compliance with health and safety regulations
  • Develop, implement, and manage the department's budget including labor and food cost control
  • Develop and implement menus and backup procedures within corporate guidelines to improve revenue and profit margins
  • Execute and promote the Accident Prevention Program to minimize liabilities and related expenses
