Job Requirements
- Two plus years of post-high school education
- Five plus years of employment in a related position
- Experience in hotel kitchen management preferred
- Knowledge of food safety and sanitation regulations
- Strong leadership and interpersonal skills
- Ability to manage budgets and control costs
- Effective communication skills
- Availability to work regular hours and comply with attendance rules
Job Qualifications
- Two plus years of post-high school education, culinary education is desirable
- Five plus years of employment in a related position
- Hotel experience preferred
- Requires advanced knowledge of food profession principles and practices including management of people and food and beverage operations
- Knowledge of hotel operations including marketing, security, safety, personnel relations, business planning, maintenance, budgeting, quality assurance, hospitality law, and long-range planning
- Strong leadership skills to motivate and develop staff and achieve goals
- Ability to work effectively under time constraints and deadlines
- Effective verbal and written communication skills with ability to adapt communication for different audiences
Job Duties
- Direct the day-to-day operations of all areas of the kitchen including outlets, banquets, stewarding, and purchasing
- Manage human resources in the kitchen including interview, hire, train, develop, coach, conduct reviews, resolve problems, and discipline
- Plan and manage procurement, production, preparation, and presentation of all food in a safe, sanitary, cost-effective manner
- Monitor and control the maintenance and sanitation of kitchen, equipment, and related areas to ensure compliance with health and safety regulations
- Develop, implement, and manage the department's budget including labor and food cost control
- Develop and implement menus and backup procedures within corporate guidelines to improve revenue and profit margins
- Execute and promote the Accident Prevention Program to minimize liabilities and related expenses
