Job Requirements

  • 2 plus years culinary education preferred
  • 3 to 5 plus years experience in similar position required
  • advanced knowledge of food profession principles and practices
  • proficient knowledge of human resources management
  • excellent knowledge of BOH systems, ordering and inventory
  • excellent communication skills and ability to meet deadlines
  • availability to work on call, all shifts, after hours, over weekends and on public holidays
  • proficiency in Microsoft Outlook, Excel and Word
  • aptitude to learn automated inventory and purchasing systems
  • experience or involvement in bar operations preferred
  • able to obtain and maintain a valid Kentucky gaming/racing license

  • valid Kentucky gaming/racing license or ability to obtain and maintain

Job Duties

  • Plan and direct food preparation and culinary activities consistent with the brand and annual plan
  • ensuring high quality food and beverage to guests while maintaining cost to an acceptable level
  • cleaning and organizing the kitchen consistently
  • emphasize food diversity and quality in presentation
  • direct and manage staff of culinary and stewarding teams
  • develop new recipes, plan menus, and complete administrative tasks
  • hire, train, and coach staff to maintain high standards and efficiency
  • train staff on safe operating procedures for equipment
  • establish and review staffing levels to maintain budgeted employment
  • enforce company policies, safety, and health regulations
  • monitor service execution, ticket times, and production schedules
  • establish and maintain recipes and ensure proper execution
  • develop prep and production schedules for all restaurants
  • control food costs and manage purchasing, storage, portion control, and waste
  • maintain equipment through scheduled maintenance
  • develop budgets and business plans in cooperation with the F&B team
  • coordinate menu improvements and pricing
  • work with marketing for events and promotional activities
  • maintain cooperative relationships with management and vendors
  • gather feedback on food and service, handle customer complaints
  • perform other assigned duties as needed
