Job Qualifications
- 2+ years culinary education preferred
- 3-5+ years experience in similar executive chef position
- advanced knowledge of food profession principles and practices
- proficient knowledge of human resources management
- excellent knowledge of back of house systems, ordering and inventory
- excellent communication skills and ability to meet deadlines
- experience in bar operations preferred
- proficiency in Microsoft Outlook, Excel, and Word
- ability to obtain and maintain a valid Kentucky gaming/racing license
Job Duties
- Plan and direct food preparation and culinary activities consistent with the brand and annual plan
- Ensure high quality food and beverage to guests while maintaining cost to an acceptable level
- Maintain cleanliness and organization at all times
- Emphasize food diversity and quality in a timely fashion
- Direct and manage culinary and stewarding staff teams
- Develop new recipes, plan menus, and handle administrative tasks
- Hire, train, and coach staff to ensure prompt, fresh, and appealing service
- Train staff in safe operating procedures of equipment and machinery
- Review staffing levels and manage delegation of duties
- Enforce company policies, safety, and health regulations
- Monitor service delivery standards, ticket times, and production schedules
- Establish and ensure execution of recipes and menu standards
- Develop prep and production schedules for all kitchen operations
- Control food costs, purchasing, inventory, portion control, and waste management
- Schedule maintenance for kitchen equipment
- Develop budgets and business plans
- Coordinate with marketing for VIP events and promotions
- Maintain cooperative relationships with management and vendors
- Handle customer feedback and complaints
- Perform additional duties as assigned
