Job Requirements
- High school diploma or equivalent
- five plus years of kitchen management or executive chef experience
- current ServSafe certification
- ability to work in a fast-paced and high-volume entertainment environment
- excellent leadership and organizational skills
- ability to recruit, train, and develop kitchen staff
- knowledge of local Department of Health regulations
- capacity to manage budgets and control food costs
- physical ability to walk, bend, stand for extended periods, and occasionally lift objects with assistance
Job Qualifications
- Five plus years of kitchen management or executive chef experience
- bachelor's or culinary degree preferred
- experience in high-volume retail, entertainment, hospitality, or restaurant venues required
- extensive experience in banquet style events
- experience managing and developing teams
- current ServSafe certification required
- ServSafe instructor certification or ability to be certified preferred
Job Duties
- Adhere to the company's mandated F&B menu and purchasing programs
- maintain budgeted revenue, costs of sales, labor, supplies, and operating cash flow related to food operations
- review monthly profit and loss statements and make necessary adjustments
- work with operations and sales teams to plan, supervise, and execute all events including food preparation, service, and cleanup
- assist with cooking when needed
- estimate food consumption and make appropriate purchases
- schedule staff efficiently to accommodate business volume shifts
- recruit, hire, train, and retain kitchen staff
- develop key staff including sous chefs and lead cooks
- ensure product quality, freshness, and presentation meet company standards
- supervise food preparation, portioning, garnishing, and storage
- manage kitchen equipment maintenance
- conduct sanitation audits and cleaning schedules to comply with Department of Health regulations
- report critical health issues to the General Manager
