Job Requirements
- High school diploma or equivalent
- Proven experience in culinary leadership preferably within hotel or fine dining environments
- Strong communication and organizational skills
- Ability to work flexible hours including weekends and holidays
- Knowledge of food safety and sanitation regulations
- Ability to stand, walk, and/or sit for 8+ hour shifts
- Capable of frequent twisting, bending and reaching
- Physical ability to perform job functions safely
- Comfortable with engaging and managing diverse teams
- Proactive recruiting and staff management skills

- Experience in high volume catering with hotel top brands and fine dining

Job Duties
- Consistently offers professional, engaging and friendly service
- Oversee daily operations of the kitchen department including banquets, outlets, in room dining, staff cafeteria and stewarding
- Responsible for the execution of the hotel's strategic plan in all culinary areas
- Role model service promises and ensure focus on service essentials across departments
- Develop and prepare menus balancing creativity, guest requests, presentation and food quality
- Maintain food and beverage standards using standardized recipes and food safety practices
- Optimize profitability through monitoring inventory, food cost controls and promotional initiatives
- Use labor management tools to set and monitor staffing and productivity
- Prepare weekly schedules to maximize productivity
- Maintain staffing levels through proactive recruiting
- Ensure timely performance management and colleague training
- Participate in the development and implementation of kitchen and restaurant capital projects
- Attend weekly operational and banquet event meetings
- Ensure compliance with hotel operating controls and health and safety regulations
- Oversee menu creation for the staff restaurant
- Promote teamwork within the kitchen and support interdepartmental relationships
- Participate in media and community events to promote the hotel
- Respond personally to food-related feedback and produce necessary reports
- Maintain kitchen equipment in good working order
- Participate in departmental and food and beverage meetings and support colleague involvement in hotel committees
