Job Requirements
- experience in kitchen management or as an executive chef for 5 or more years
- bachelor's or culinary degree preferred
- experience in high-volume retail, entertainment, hospitality, or restaurant venue required
- extensive experience with banquet style events
- experience managing and developing teams required
- current ServSafe certification required
- ability to obtain ServSafe instructor certification preferred
- ability to walk, bend, stand for extended periods and lift objects with assistance in an entertainment center environment

Job Duties
- adhere to the company's mandated food and beverage menu and purchasing programs
- maintain budgeted revenue, costs of sales, labor, and supplies
- review monthly profit and loss statements and make adjustments as necessary
- work with the operations team and sales staff to plan, supervise, and execute all events
- supervise the preparation and service of all food and beverage including cleanup
- assist with cooking when needed
- estimate food consumption and make appropriate purchases
- schedule staff efficiently to accommodate business volume shifts
- recruit, hire, train, and retain kitchen staff
- develop key staff including sous chefs and lead cooks
- ensure product quality, freshness, and presentation meet company standards
- supervise preparation, portioning, garnishing, and storage of all food
- manage kitchen equipment maintenance
- conduct sanitation audits and cleaning schedules to comply with Department of Health regulations
- report critical issues to the General Manager
