Job Requirements
- experience as an executive chef or kitchen manager for a minimum of 5 years
- proven ability to manage food and beverage operations in a high-volume entertainment or hospitality setting
- strong leadership and organizational skills
- familiarity with budget management and profit and loss analysis
- ability to train and develop kitchen staff
- ServSafe certification required
- excellent communication and interpersonal skills
- ability to work in a fast-paced environment
Job Qualifications
- 5 plus years of kitchen management or chef experience
- bachelor’s or culinary degree preferred
- experience in high-volume retail, entertainment, hospitality, or restaurant venues
- extensive experience in banquet style events
- experience managing and developing teams
- current ServSafe certification
- ServSafe instructor certification or ability to be certified preferred
Job Duties
- adhere to the company’s mandated food and beverage menu and purchasing programs
- maintain budgeted revenue, costs of sales, labor, supplies, and operating cash flow related to food operations
- review monthly profit and loss statements and adjust as necessary
- work with operations and sales teams to plan, supervise, and execute all events including food and beverage service and cleanup
- assist with cooking as needed
- estimate food consumption and make purchases per specified food program
- schedule staff efficiently based on business volume
- recruit, hire, train, and retain kitchen staff
- develop key team members such as sous chefs and lead cooks
- ensure product quality, freshness, and presentation meet company standards
- supervise preparation, portioning, garnishing, and storage of all food
- manage kitchen equipment maintenance, conduct sanitation audits, and ensure compliance with local Department of Health regulations
- report critical issues to the General Manager
