Job Requirements

  • minimum of 5 years kitchen management or executive chef experience
  • bachelor’s or culinary degree preferred
  • experience in high-volume retail, entertainment, hospitality, or restaurant environment required
  • extensive banquet style event experience
  • proven team management and development skills
  • current ServSafe certification
  • ability to obtain ServSafe instructor certification preferred

Job Duties

  • adhere to the companys mandated f&b menu and purchasing programs
  • maintain budgeted revenue, costs of sales, labor, supplies, as well as operating cash flow as it relates to food operations
  • review monthly profit & loss statements and make adjustments as necessary
  • work with operations and sales staff to plan and supervise events, including food preparation and service
  • assist with cooking when needed
  • estimate food consumption and make purchases accordingly
  • schedule staff efficiently to meet business volume shifts
  • recruit, hire, train, and retain kitchen staff
  • develop key staff such as sous chefs and lead cooks
  • ensure product quality, freshness, and presentation meet company standards
  • supervise preparation, portioning, garnishing, and storage of food
  • manage kitchen equipment maintenance
  • implement and conduct sanitation audits and cleaning schedules to comply with health department regulations
  • report critical issues to the General Manager
