Job Requirements

  • Certification or college degree in culinary arts
  • Minimum three years experience as a chef or kitchen manager
  • Two years supervisory and management experience
  • Current Food Services Sanitation certificate
  • Ability to delegate assignments based on skills and roles
  • Strong written and verbal communication skills
  • Competent organizational and time management skills
  • Good judgment and decision-making skills
  • Proficiency in Microsoft Office and relevant applications
  • Ability to work weekends, evenings and flexible hours

Job Qualifications

Job Duties

  • Leads overall food production, food presentation, menu development and planning, oversight and supervision of dining services team members and labor management, purchasing, managing food cost and financial management
  • Develops menus to community and regulatory standards
  • Demonstrates, incorporates knowledge and provides leadership in specialty areas of nutrition and therapeutic diets
  • Supports and adheres to product order guide and primary vendor program
  • Ensures all meals and serving portions are prepared in accordance with quality and industry standards
  • Provides methods/procedures that count, measure and weigh food for cost and portion control
  • Facilitates food production, food presentation and sanitation training to dining service team members
  • Champions community goals of food quality achievement by monitoring peak timing, cooking methods, plating, garnishing and service delivery
  • Ensures HACCP system is in place and followed
  • Supports and oversees special events food production and presentation with emphasis on marketing events
  • Oversees Bistro, Banquets, catering events, and other dining venues
  • Reviews records for food and equipment temperature, side-work, and cleaning checklists for compliance
  • Maintains food rotation and security per quality standards and regulations
  • Maintains past production sheets and HACCP records
  • Promotes customer engagement and monitors resident satisfaction at meal times
  • Reviews and documents resident dietary, physical and behavioral changes
  • Participates in Resident Counsel and food committee meetings
  • Maintains confidentiality of resident information
  • Ensures compliance with occupational health and safety regulations, including PPE and Lockout Tagout
  • Maintains safe, healthful work areas and practices safe food handling
  • Assists executive director with annual budget and manages department budget including labor and expenses
  • Reviews financial statements and implements corrective actions
  • Manages department staffing including recruiting, hiring, training, coaching, disciplining and mentoring
  • Participates in training programs and ensures regulatory compliance
  • Achieves team member engagement goals and leads improvement sessions
  • Reviews timekeeping and payroll reports for accuracy
  • Conducts performance appraisals and holds team accountable
  • Attends regular meetings and keeps abreast of professional developments
  • Maintains compliance with required training
  • Performs other duties as assigned.
