Job Qualifications

  • Culinary Arts degree
  • ServSafe certification
  • knowledge of HACCP
  • five years chef experience in high volume restaurant, country club, catering, or cultural attraction venue

  • financial management and planning skills
  • computer proficiency for basic office functions
  • ability to remain flexible in a fast-paced environment

Job Duties

  • Interview, hire, evaluate, reward, and coach kitchen personnel as appropriate
  • develop culinary training programs
  • train kitchen personnel in safe operating procedures
  • assist General Manager with sales forecasting
  • direct and coordinate production and dish room staff
  • maintain positive relationships with client staff
  • manage employees according to labor laws
  • maintain clean, safe, organized work environment
  • uphold and demonstrate company policies
  • perform SSA EXTRA Guest Service
  • supervise period end inventory
  • direct and participate in daily food preparation
  • monitor proper cooking and holding temperatures
  • establish maintenance schedules and provide safety training
  • ensure high quality and consistency across operations
  • inspect food preparation and sanitation
  • place food orders and maintain vendor communication
  • evaluate raw and finished food quality
  • enforce sanitary practices
  • comply with food safety regulations
  • process invoices for vendors
  • manage culinary operational functions
  • control food cost
  • prepare operational reports and analyses
  • analyze sales and inventory
  • manage payroll and controllable profit
  • schedule staff according to budget and forecast
  • set precedent to achieve sales and budget goals
  • incorporate sustainable resources
  • promote an inclusive and supportive approach
