Job Requirements
- High school diploma required
- Culinary arts degree preferred
- Three plus years supervisory experience in high volume, fast paced kitchens
- Current sanitation certification or obtain within six months
- Safe food handling certification
- Experience in menu planning, purchasing, and inventory control
- Ability to lift or carry up to 50 pounds
- Standing for extended periods
- Must be able to work nights, weekends, and holidays
- Ability to maintain kitchen sanitation and safety standards
- Proficient computer skills including inventory and ordering systems
- Excellent communication and leadership skills
- Must comply with all food safety regulations and policies
Job Qualifications
- High school diploma
- Culinary arts degree preferred
- Current and approved sanitation certification or must obtain within 6 months
- Safe food handling certification
- Minimum three years supervisory experience as an Executive Chef or equivalent in a high-volume restaurant
- Over seven years managing high volume commercial kitchens
- Preferably five or more years fine dining cooking and culinary leadership experience
- Mastery of multiple kitchen stations and cooking techniques
- Ability to think quickly and create excellent food products
- Knowledge of culinary trends and food presentation
- Highly organized with strong time management skills
- Proficient in online purchasing, inventory management, and spreadsheet creation
- Excellent record of kitchen and staff management
- Strong mathematical skills for business needs
- Effective communication skills with managers, staff, and guests
- Ability to work flexible schedule including nights, weekends, and holidays
Job Duties
- Supervises and oversees kitchen staff in food preparation and service
- Assists in preparation and service for other departments and special occasions
- Ensures completion of special diet orders according to guidelines
- Directs daily food production operations including menu planning, purchasing, and inventory
- Oversees food portioning, garnishing, presentation, and safe storage
- Orders food and equipment
- Ensures cleanliness and organization of kitchen and dining areas
- Trains chefs and staff in culinary skills and safety certifications
- Delegates authority and monitors operating standards
- Provides feedback, coaching, and performance evaluations
- Ensures compliance with federal, state, and local food safety and sanitation regulations
- Maintains safe work environment through training and equipment maintenance
- Promotes resident rights and proper handling of hazardous materials
- Reports hazardous conditions and incidents
- Follows sanitation, food safety, and personal hygiene protocols
- Manages budget by controlling costs and making necessary adjustments
- Establishes and communicates operating standards and quality improvements
