Job Requirements

Job Qualifications

  • Experience as an executive chef or in a senior culinary leadership role
  • Strong culinary skills and creativity
  • Knowledge of food safety and sanitation standards
  • Ability to develop recipes and production standards
  • Leadership and training experience
  • Excellent communication and interpersonal skills
  • Familiarity with budgeting and cost control
  • Ability to manage and motivate a team
  • Customer-focused mindset
  • Knowledge of operational systems including payroll, inventory, and purchasing
  • Ability to adapt quickly to change
  • Physical capability to perform kitchen duties

Job Duties

  • Direct and oversee all culinary operations including production of all hotel meals and food quality and presentation
  • Ensure compliance with all safety and sanitation standards and regulations
  • Create recipes and production standards
  • Assist with performance reviews and monthly one-on-ones
  • Address and resolve guest and employee concerns
  • Maintain in-depth knowledge of all food and beverage menus
  • Ensure adequate staffing for each meal period
  • Maintain P and L authority over the location and department
  • Identify talent and manage hiring and onboarding
  • Inspect all food service stations during service
  • Maintain general cleanliness of heart-of-house
  • Ensure completion of opening and closing procedures by BOH employees
  • Ensure compliance with Department of Health and company sanitation standards
  • Stay updated on market trends to maximize sales opportunities
  • Perform duties of employees in their absence
  • Conduct and attend departmental meetings
  • Support budgeted sales and profit goals and maintain labor efficiency
  • Monitor and control food and beverage inventories
  • Manage food preparation
  • Develop guidelines and control procedures for purchasing and receiving
  • Collaborate with Food and Beverage Director on capital expenditure needs
  • Assist with other management duties as requested
