Job Duties
- assist in planning, preparation, and execution of special events, banquets, and theme meals
- use innovation, imagination, originality, and talent to produce menus and recipes that utilize the highest quality ingredients allowed within budget
- understand and maintain monthly and annual budgets for Food and Beverage department, including documentation of monthly spend on food, supplies, and labor
- review and adjust menus to accommodate seasonal ingredients, recipe improvements, supply chain issues, rebates, and cost increases
- ensure purchasing standards are maintained and approved vendors are used
- maintain strong relationships with vendors
- accurately report and submit monthly inventory of food and beverage supplies
- interview, hire and train culinary and back of the house staff
- manage and supervise culinary staff including scheduling, direction, and performance review
- work with leadership to maintain customer satisfaction and health survey scores
- ensure preventive maintenance of kitchen equipment and staff proper use
- meet dietary needs and restrictions
- enforce food policies including hygiene and safe storage
- manage food preparation to avoid overproduction and waste
- oversee accurate daily records
- provide ongoing staff training in food preparation and service
- collaborate with Hospitality Manager to ensure front and back of house work closely
- work with marketing and activities to meet special needs and plan unique events
- meet with residents and families to confirm satisfaction
- advise community leadership of resident concerns
- assist kitchen and restaurant staff with operations as needed
