Job Requirements
- Eight to ten years of executive chef experience at reputable hotels or resorts
- Extensive menu development and costing experience
- Five plus years in multi-outlet food production management
- Excellent communication and delegation skills
- Ability to lead and motivate culinary teams
- Hands-on knowledge of food production
- Strong mentoring and coaching capabilities
Job Qualifications
- Eight to ten years of experience as an Executive Chef at reputable hotels or resorts
- Extensive menu development and costing experience
- Five plus years of experience in multi-outlet food production management
- Outstanding communication, delegation, and visionary leadership skills
- Hands-on working knowledge in all aspects of food production to ensure proper training
- Ability to mentor and coach to maintain employee retention
Job Duties
- Create menus which reflect seasonal availability based on the concept of the restaurant and food & beverage merchandising programs for grab & go or other retail elements
- Analyze menus and procedures to improve profit and quality
- Monitor guest needs, hotel’s guest mix, and industry trends to make menu changes
- Develop daily, seasonal, and special event menus to enhance guest experience
- Forecast purchases and maintain food cost to align with budget
- Lead safety, efficiency, and sanitary production in the kitchen
- Develop purchase specifications and ensure food inspection and receiving standards
- Monitor all activities of Stewarding department and personnel
- Design training and development plans to enhance culinary team skills
- Provide demonstrations and examples of quality food and recipe standards
- Create an amenity program reflecting the hotel and its environment with a wow factor
- Foster a culture of ”One Team” where all employees feel empowered to assist any guests
- Maintain clear communication with General Manager, Corporate Director of Food & Beverage, and Human Resources department
