Job Requirements

  • High school diploma or GED
  • Minimum 10 years experience in food operations
  • Minimum 5 years experience as Executive Chef
  • Must be 18 years old or older
  • No felony or theft convictions
  • Ability to pass pre-employment drug and alcohol screening
  • Ability to pass background investigation
  • Ability to obtain and maintain gaming license
  • Skilled in managing multi-lingual workforce
  • Skilled in food presentation
  • Knowledge of culinary equipment maintenance
  • Knowledge of scheduling
  • Knowledge of organizational structure
  • Advanced food preparation knowledge
  • Knowledge of cost controls
  • Ability to obtain TIPS certification
  • Ability to obtain Food Handlers card
  • Ability to lead and mentor chefs
  • Ability to develop menus
  • Ability to understand and follow instructions and procedures
  • Ability to lead and train all levels of staff
  • Ability to interpret financial statements
  • Ability to communicate in English verbally and in writing
  • Ability to work in fast-paced environment
  • Ability to work under pressure and maintain professional demeanor
  • Intermediate to advanced computer skills
  • Ability to lift and move up to 50 pounds occasionally

Job Qualifications

  • High school diploma or GED
  • Culinary degree preferred
  • 10 years experience in food operations including fine and casual dining, buffets, production, purchasing, training, menu development, and administration
  • 5 years experience at Executive Chef level
  • Skilled in managing diverse and multi-lingual workforce
  • Skilled in food presentation and decorative displays
  • Knowledge of culinary facility maintenance
  • Knowledge of scheduling to control labor costs
  • Knowledge of organizational workflow and procedures
  • Advanced knowledge of food preparation and presentation methods
  • Knowledge of cost controls in food and labor
  • Ability to obtain TIPS certification
  • Ability to obtain Food Handlers card
  • Ability to provide vision, leadership, and direction
  • Ability to develop flavorful, well-presented, and cost-effective menus
  • Ability to create menus matching themes and special requests
  • Ability to lead and train staff
  • Ability to interpret profit and loss statements
  • Ability to communicate effectively in English
  • Intermediate to advanced computer skills including Microsoft Office

Job Duties

  • Ensure compliance with all Tohono O'odham Gaming Enterprise policies and procedures including internal controls
  • Complete disciplinary procedures and documentation timely
  • Administer enterprise and department policies fairly and consistently
  • Treat team members fairly and equitably
  • Ensure compliance with all food handling and sanitation standards
  • Maintain required food handling and sanitation certifications for team members
  • Provide guidance and direction to Executive Sous Chef and staff including setting goals and monitoring performance
  • Lead, influence, and encourage others demonstrating honesty and integrity
  • Establish goals including performance, budget, and team goals
  • Initiate and provide vision for menu development ensuring flavorful, well-presented, and cost-effective items
  • Foster trust, respect, and cooperation among team members
  • Ensure compliance with Tribal, City, and Federal Health/Food Safety codes
  • Adhere to all Title 4 Arizona liquor laws and TOGE internal controls
  • Maintain a clean, organized, and sanitized work area
  • Serve alcoholic and non-alcoholic beverages ensuring legal drinking age compliance
  • Manage day-to-day operations ensuring guest satisfaction
  • Review staffing levels to meet service, operational, and financial objectives
  • Perform duties in team members' absence when needed
  • Work with Human Resources to fill open positions
  • Identify developmental needs and coach staff
  • Manage progressive discipline procedures
  • Administer performance appraisal process
  • Follow proper food handling and temperature standards
  • Prepare and cook foods for regular and special events
  • Support on-brand service behaviors
  • Communicate effectively with teams and executive staff
  • Recognize superior product quality and presentation
  • Improve service through feedback and coaching
  • Train kitchen team on cooking fundamentals and presentations
  • Demonstrate new cooking techniques and equipment
  • Collaborate with banquet and catering departments
  • Observe service behaviors and provide feedback
  • Utilize enterprise systems to meet goals
  • Manage food and beverage managers and report issues
  • Analyze information to solve problems
  • Manage department controllable expenses including food cost, supplies, and equipment
  • Participate in budgeting process
  • Analyze member and guest feedback to improve services
