Job Requirements

  • At least 5 years of progressive experience in a hotel or related field or a 4-year college degree with 3 years related experience required
  • culinary degree preferred
  • prior experience as an Executive Chef preferred
  • food handler certification or equivalent required
  • strong knowledge of food safety, menu development, budgeting and forecasting, quality control, food inventory and purchasing controls
  • must have knowledge of food and beverage preparation techniques, health department rules and regulations, local liquor laws and regulations
  • flexible and long hours sometimes required
  • medium work - exerting up to 50 pounds of force occasionally and/or 20 pounds frequently or constantly to lift, carry, push, pull or otherwise move objects
  • associates must be attentive, friendly, helpful, and courteous at all times
  • ensure guest satisfaction and safety
  • oversee daily culinary operations
  • communicate effectively with supervisors and guests
  • assist in loss prevention
  • ensure compliance with SOPs and health laws
  • conduct performance reviews
  • train and develop staff
  • manage payroll and scheduling
  • prepare food purchase orders
  • monitor food safety and sanitation
  • communicate maintenance needs
  • assist catering sales
  • conduct interviews

Job Qualifications

Job Duties

  • Coordinate and supervise all culinary operations
  • develop menus and service standards
  • promote business and reduce associate turnover
  • manage revenue, forecasting, labor and payroll budgets
  • maintain high food sanitation standards
  • oversee food service retail, Banquets & Catering, and kitchens
  • collaborate with Food and Beverage Managers
  • prepare reports including wage progress and payroll
  • address guest complaints promptly
  • ensure compliance with SOPs and requisition procedures
  • conduct performance reviews and training
  • monitor food quality and presentation
  • develop labor schedules and adjust as needed
  • oversee food purchasing and inventory control
  • communicate maintenance issues
  • assist with special menus and pricing
  • interview and hire staff
