Job Requirements

  • Requires culinary degree or equivalent experience
  • Minimum of 4 years culinary experience
  • At least 2 years in a management role preferred
  • Ability to multi-task
  • Strong oral, reading, and written communication skills
  • Ability to simplify agenda
  • Advanced knowledge of culinary principles and practices
  • Experience in managing people and problem solving

Job Duties

  • Ensure culinary production aligns with Executional Framework
  • Maintain proper culinary standards and techniques for food preparation, production, presentation, and service
  • Manage culinary team including chef managers and hourly staff to ensure food quality
  • Train and manage culinary and kitchen employees on best practice food production techniques
  • Coach employees by creating shared understanding of goals and methods
  • Reward and recognize employees
  • Plan and execute team meetings and daily huddles
  • Maintain staff records including training, checklists, and performance data
  • Develop and maintain client and guest rapport
  • Interact directly with guests daily
  • Communicate regional culinary and ingredient trends
  • Deliver food and labor targets
  • Focus on margin improvement through understanding metrics and inventory trends
  • Execute and deliver culinary products per daily menu
  • Maintain food quality and safety standards
  • Manage waste and standardize menus, recipes, and ingredients
  • Oversee supply chain and procurement ensuring use of authorized suppliers
  • Implement Food Framework
  • Ensure accurate food consumption estimates for requisitions
  • Maintain equipment operation and compliance with safety policies
  • Comply with all applicable policies and regulations including safety and labor laws
