Job Requirements

  • High school diploma/GED required
  • equivalent to a college education with thorough knowledge of Culinary Arts
  • 9 -10 years of food preparation experience preferred
  • must understand and speak the English language
  • ability to lift and/or move up to 100 pounds
  • ability to push and pull carts and equipment weighing up to 250 pounds occasionally
  • manual dexterity to operate necessary equipment
  • ability to stand, walk frequently and occasionally sit, reach, stoop, kneel, and crouch
  • capability to work with cleaning products and chemicals safely.

Job Qualifications

Job Duties

  • Manages and oversees food storage, preparation and production, and menu creation
  • determines efficient use of food items
  • responsible for designing and coordinating menus for all restaurant facilities and banquet facilities
  • responsible for all food related costs and other cost associated with the food service operations on property
  • responsible for facility maintenance with the Food and Beverage areas
  • effectively manages the food service staff and ensures Red Carpet Readiness
  • provides a high level of guest service and promotes a positive attitude to create a fun and entertaining experience
  • manages employees engaged in food preparation and production
  • reviews preparation and production procedures to ensure proper holding/heating temperatures, rotation, flavor, texture, and presentation of food
  • reviews and updates usage, guest count, and revenue reports to recommend changes in the menu, staffing, production, or methods
  • ensures proper education and training of staff on safe handling, preparation, production, and presentation methods
  • reviews beginning and ending inventories to determine best usage of food item to minimize spoilage
  • investigates, researches, and recommends menu changes
  • works with the Purchasing Manager to research availability of new food items
  • monitors all departmental expenses (food cost, labor, and other expenses) to ensure compliance with budget
  • participates in planning and formulating the departmental budget
  • reviews staffing and departmental scheduling to ensure proper customer service and that production levels are maintained
  • controls food production to maintain budgeted food cost
  • manages all aspects of Utility/Cleaners employees to maintain a clean, sanitary work environment
  • includes scheduling, product use, and staffing
  • maintains a well-informed staff by conducting quarterly department meetings, daily staff meeting, and newsletters or posting in the department
  • monitors all coaching and counseling to assure consistency and timely completion
  • monitors and review all performance reviews for all employees to assure accuracy and timely distribution
  • other duties as assigned.
