Job Requirements

  • High school diploma or equivalent
  • Experience in culinary leadership roles
  • Ability to stand, walk, and/or sit for an eight-plus hour shift
  • Ability to perform frequent twisting, bending, stooping, reaching, standing, and walking
  • Ability to engage in frequent talking, hearing, seeing, and smiling
  • Knowledge of food safety and sanitary regulations
  • Strong communication and interpersonal skills
  • Ability to manage multiple culinary areas including banquets, outlets, in-room dining, staff cafeteria, and stewarding
  • Experience with labor management tools and scheduling
  • Ability to work varied shifts including nights, weekends, and holidays

  • Experienced in high volume catering with hotel top brands and fine dining
  • Proven leadership and managerial skills supporting team growth and exceptional customer service
  • Knowledge of current culinary trends and ongoing professional development
  • Creative with strong service skills and ability to energize a diverse culinary team
  • Proven financial planning skills with the ability to analyze data and implement improvement strategies
  • Fully supportive and aware of all corporate programs
  • Comfortable with television and other media promotional venues
  • Computer literate

Job Duties

  • Lead culinary team to consistently execute at a high level
  • Develop and implement creative menus for outlets and catering
  • Oversee all kitchen operations including procurement, production, preparation, and presentation
  • Develop recipes, cost controls, and plating specifications
  • Conduct line checks and production schedules
  • Ensure cleaning duties comply with safety and sanitation standards
  • Monitor inventory levels and food cost controls
  • Prepare weekly schedules and manage staffing levels
  • Recruit and maintain staff proactively
  • Manage performance and colleague training
  • Participate in operational and banquet event meetings
  • Ensure compliance with hotel operating controls and health regulations
  • Respond to food-related feedback and ensure proper reporting
  • Maintain kitchen equipment
  • Promote teamwork and maintain strong interdepartmental relationships
  • Engage in media and community promotional activities
