Job Requirements

  • A passion for excellence
  • be a great team player
  • culinary degree and 3 years professional culinary experience in established scratch cooking food production required or 7-10 years professional culinary experience in lieu of degree
  • menu creation and ability to teach cooking techniques, regional cuisines and culinary skills required
  • extensive experience in multiple cuisines, preferably classically trained
  • vendor management, purchasing and costing experience preferred
  • strong communication and leadership skills
  • current Food Handler's Certificate required

Job Duties

  • Create and implement vision for service excellence in dining
  • manage and improve resident and family satisfaction and loyalty within dining program
  • identify, benchmark and leverage best practices of customer experiences within dining program
  • develop and maintain effective relationships and two-way communication with residents and families
  • communicate company vision and strategy to align daily activities with company goals
  • create and prepare high-quality meals using fresh ingredients and scratch recipes consistent with local tastes
  • demonstrate senior culinary leadership with advanced cooking techniques and diverse cuisines
  • create seasonal menus aligned with regional preferences promoting choice for residents, guests and associates
  • supervise culinary department operations daily and inform Food and Beverage Director of key updates
  • fully supervise culinary team including all cooks and production associates, provide teaching and leadership
  • maintain kitchens, storerooms and scullery in clean, sanitary condition per health codes
  • serve as morning or evening cook as needed
  • maintain inventory control of kitchen wares, equipment and supplies
  • ensure safe working condition of all food service equipment
  • purchase all food and non-food supplies from approved vendors using local artisans when possible
  • direct responsibility of cooks and utility workers
