Job Duties

  • Supervise kitchen and dining staff
  • participate in hiring, discipline, assessment, and termination of direct reports
  • recommend compensation at hire, promotion, and merit
  • ensure all functions are staffed by developing and maintaining employee schedules
  • supervise cooks and kitchen staff overseeing preparation, portioning, garnishing, and storage of food
  • develop and implement standard recipes and food preparation techniques to assure high quality and control costs
  • evaluate food products to ensure consistent quality standards
  • taste food to determine quality and palatability
  • establish and maintain cleaning and maintenance schedules for kitchen areas and equipment
  • schedule and coordinate work of kitchen employees to manage labor within budget goals
  • implement training on safety, sanitation, and accident prevention
  • control food and payroll costs to maximize profitability
  • order and approve requisition of food supplies
  • consult with Director of Dining Services about food production for meals and special events
  • conduct regular quality assurance audits
  • maintain professional appearance and hygiene
  • assist with special projects
  • perform other duties as assigned
