Job Requirements
- Degree or certificate in Culinary Arts
- One to two years experience in an Executive Chef role
- Ability to stand for extended periods
- Ability to lift up to 50 pounds
- Availability to work holidays and weekends
- Understanding of MSDS and OSHA safety standards
- Strong communication and organizational skills
- Commitment to sustainability practices
Job Qualifications
- Degree or certificate in Culinary Arts
- One to two years experience as an Executive Chef or similar role
- Expertise in food product, presentation, quality and preparation
- Knowledge of menu concept and design
- Strong leadership and team management skills
- Familiarity with health, safety and sanitation standards
- Ability to collaborate with cross-functional teams
- Experience with sustainability practices in food service
Job Duties
- Interview, select, train, schedule, coach and support associates ensuring compliance with brand and hotel standards
- Establish priorities and assign production and preparation tasks to staff
- Review daily menu specials, banquet event orders and inventory food items
- Requisition day’s supplies ensuring correct receipt and storage
- Communicate needs with purchasing and storeroom personnel
- Ensure quality of products received
- Meet with Executive Steward to review equipment needs, banquet assistance, cleaning schedules, health and safety follow-ups
- Ensure each kitchen work area is stocked with necessary tools, supplies, equipment, and up-to-date recipe cards and documentation
- Ensure staff prepares menu items according to recipes and yield guides
- Develop, test and write new recipes and menu items
- Observe guest reactions and coordinate with service staff to ensure guest satisfaction
- Conduct kitchen walk-throughs to identify and correct deficiencies
- Assist catering department with special menu development and client meetings
- Review sales and food costs daily to manage inventory efficiently
- Prepare weekly work schedules aligned with labor forecasts
- Follow sustainability guidelines as per EarthView program
- Adopt safe work habits and comply with MSDS and OSHA standards
- Perform other duties as assigned by management
