Job Requirements

  • High school diploma or GED
  • Certificate from accredited culinary school, college, or technical school
  • Ten or more years of hands-on culinary supervisory experience
  • Five plus years in multi-purpose, high volume operation or similar environment
  • Able to work flexible hours including nights, weekends, and holidays
  • Capability to lift up to fifty pounds
  • Ability to perform repetitive eye-hand coordination tasks
  • Manual dexterity and good balance
  • Ability to stand, walk, and reach for extended periods
  • Ability to work under temperature extremes and noisy environments

Job Qualifications

  • Proven experience as an executive chef or head chef in high-volume multi-functional kitchens preferably in convention centers, hotels, or large event venues
  • Culinary degree or equivalent professional experience
  • Strong knowledge of food trends, international cuisines, and diverse dietary needs
  • Excellent leadership and communication skills
  • Ability to work under pressure and meet tight deadlines
  • Strong financial acumen with experience in budgeting, cost control, and inventory management
  • Proficiency in kitchen equipment and technology
  • Knowledge of health and safety regulations and compliance with health codes
  • Strong customer service orientation
  • Ability to create and support a team environment
  • Adaptability to change in work environment managing competing demands and unexpected events

Job Duties

  • Create and design menus for various events including banquets, conferences, special events and concessions/retail
  • Prepare and serve food in diverse locations including the plaza and outdoor areas
  • Ensure menus are innovative, diverse, and cater to dietary preferences and restrictions
  • Keep up with food trends and incorporate new dishes and techniques
  • Oversee all kitchen operations including food preparation, cooking, and plating
  • Ensure food is prepared and served timely while maintaining high quality and presentation
  • Manage food costs and inventory to maximize profitability and minimize waste
  • Recruit, train, and supervise kitchen staff including sous chefs, line cooks, and assistants
  • Schedule staff to ensure adequate coverage for all events and shifts
  • Foster a positive and collaborative team environment promoting professional development
  • Ensure compliance with health and safety regulations including food handling, sanitation, and cleanliness
  • Conduct regular kitchen and storage inspections to maintain safety and hygiene
  • Develop and implement safety protocols and procedures
  • Collaborate with event planners, clients, and departments to meet event culinary requirements
  • Attend tastings and client meetings to present menu options and address concerns
  • Prepare and manage kitchen budget including labor, food costs, and equipment purchases
  • Analyze financial reports to improve efficiency and profitability
  • Establish and maintain supplier relationships negotiating contracts for quality products at competitive prices
  • Oversee purchasing of food, beverages, and supplies ensuring timely delivery and proper storage
  • Perform other assigned duties
  • Directly supervise kitchen personnel including hiring, training, appraising performance, rewarding, disciplining in conjunction with HR, and resolving complaints
