Job Requirements

  • High school diploma
  • Three years supervisory experience as Executive Chef or equivalent
  • Seven plus years managing commercial kitchens
  • Current sanitation certification or willingness to obtain within 6 months
  • Safe Food Handling certification
  • Ability to lift up to 50 pounds
  • Ability to stand for extended periods
  • Ability to work flexible schedules
  • Proficiency in computer applications
  • Good communication skills
  • Ability to adhere to safety and sanitation standards
  • Ability to work in kitchen environment with temperature fluctuations
  • Attention to detail and manual dexterity

Job Qualifications

  • High school diploma
  • Culinary Arts degree preferred
  • Current or obtain sanitation certification within 6 months
  • Safe Food Handling certification required
  • Minimum three years supervisory experience as Executive Chef or equivalent
  • Seven plus years managing high-volume commercial kitchens
  • Five plus years cooking experience in fine dining preferred
  • Knowledge of kitchen stations, cooking methods, ingredients, and equipment
  • Ability to innovate and deliver quality food quickly
  • Proficient in time management and organization
  • Skilled in computer use for purchasing, inventory, and record-keeping
  • Strong staff and kitchen management experience
  • Ability to perform mathematical functions for business needs
  • Excellent communication skills
  • Ability to work flexible schedules including nights, weekends, holidays

Job Duties

  • Maintain high level of quality and consistency in meal preparation and service
  • Supervise and oversee kitchen staff in food production and service
  • Assist in preparation and service of special event foods and departmental requests
  • Ensure compliance with dietary orders and menu extension guidelines
  • Direct daily operations including menu planning, purchasing, inventory, and food preparation
  • Oversee food portioning, presentation, garnishing, and safe storage
  • Manage ordering of food and equipment
  • Ensure sanitation and organization of kitchen, storage, equipment, and dining areas
  • Train chefs and kitchen staff in culinary skills
  • Delegate authority and prioritize staff activities
  • Provide feedback and performance evaluations
  • Ensure compliance with federal, state, and local regulations (HACCP, ServSafe)
  • Promote safe work environment and compliance with safety programs
  • Follow sanitation and food safety procedures including temperature monitoring and food storage
  • Establish and manage budget controlling labor, inventory, and equipment costs
  • Implement operating standards and quality improvements
  • Communicate standards and improvements to employees
  • Attend required in-service training and maintain certifications
  • Report hazards, accidents, and incidents promptly
  • Comply with policies regarding residents’ rights
  • Handle cleaners, hazardous materials, and fire safety procedures
