Job Requirements

  • Must be able to successfully pass a thorough background check from the City of Citrus Heights to obtain a gaming license
  • must be able to renew and maintain an active gaming license according to city requirements

Job Qualifications

  • Excellent communication and interpersonal relationship skills
  • high school diploma or GED preferred but not required
  • minimum of 2-4 years of restaurant management experience required
  • 3-5 years cooking experience preferred
  • ability to read and interpret safety rules, operating and maintenance instructions, and procedure manuals
  • ability to write routine reports and correspondence
  • ability to speak effectively before groups of guests or team members
  • basic math skills including addition, subtraction, multiplication, and division
  • ability to solve practical problems and interpret various types of instructions

Job Duties

  • Maintain inventory par levels and preparation of all pre-portioned food items
  • order all food, paper supplies, chemicals and small wares
  • Ensure all food recipes, procedures and methods are consistently enforced
  • Recruit and retain kitchen staff
  • ensure kitchen workforce honors company values and customer service orientation through training and development
  • Budget labor costs and schedule shifts to ensure efficiency and to meet service level requirements
  • Ensure meal breaks are scheduled and provided timely
  • Ensure guests are satisfied regarding special requests like allergies, dietary needs and substitutions
  • Monitor revenues and expenses to ensure efficiency and eliminate unnecessary waste
  • Prepare all food while maintaining a healthy, clean work environment
  • Ensure practice of health and safety regulations to limit company liability
  • Maintain all Health Department Regulations, Steritech Regulations, and Q&A audits
  • Actively participate in safety training
  • take a leadership role in reporting unsafe practices or hazardous conditions
  • Negotiate supplier arrangements/costs for food and beverage products
  • Promote teamwork by assisting team members to ensure optimum service to guests
  • Report to CSM or Security any individuals in the casino who appear to be underage, intoxicated, whose conduct appears illegal, or who poses a threat to the company
  • Monitor and enforce Title 31 and Suspicious Activity Reporting policies and procedures
  • Attend annual AML/BSA training
