Job Requirements

  • High school diploma or equivalent
  • Proven experience as an Executive Chef or similar leadership role in a culinary environment
  • ServSafe certification or willingness to obtain certification
  • Ability to manage multiple cafes and back-of-house operations
  • Strong organizational skills and attention to detail
  • Ability to work flexible hours including evenings, weekends, and holidays
  • Capacity to lift up to 25 lbs
  • Ability to work under pressure and meet deadlines during peak periods
  • Commitment to following all health, safety, and quality policies
  • Excellent communication skills

Job Qualifications

  • ServSafe certified or ability to become ServSafe certified
  • Graduate of an accredited Culinary institution preferred
  • Experience in operating a successful restaurant or corporate dining facility
  • Strong leadership and team management skills
  • Excellent communication and interpersonal skills
  • Proficiency in culinary software such as NetMenu
  • Knowledge of food safety, sanitation, and workplace safety standards
  • Ability to develop and implement menus consistent with client requirements and company standards
  • Experience in financial management related to food and labor costs

Job Duties

  • Utilize NetMenu to create seasonal, regionally inspired, plant-forward recipes and menus with a minimum of 2 weeks available in the system at all times
  • Communicate the budget and support each Cafe lead in maintaining it
  • Ensure all menu offerings follow cafe-specific, client-approved programming as well as core program standards
  • Ensure menus and recipes are accurately prepared, cooked, and portioned for various meal periods including breakfast, lunch, dinner, and special catered events
  • Maintain accurate production records both pre- and post-service
  • Prepare recipes using cooking techniques as outlined by ISS Guckenheimer
  • Ensure the highest quality of food is served
  • Utilize NetMenu Order Worksheets to purchase appropriate amounts of ingredients for preparation
  • Provide the highest quality of service in accordance with ISS/Guckenheimer standards
  • Ensure employees have appropriate equipment, inventory, and resources to perform their job duties and meet goals timely
  • Notify management of any ingredient discrepancies, availability issues, food/equipment safety, or other situations requiring attention
  • Maintain and accurately function all required NetMenu applications to provide data to leadership
  • Participate in culinary leadership team meetings to provide feedback and communicate support needs
  • Follow all company guidelines, SOPs, and policies daily and ensure employee compliance
  • Follow all ISS/GEI procurement, purchasing guidelines, policies, and SOPs daily
  • Ensure Procurement Integrity Index scores meet KPIs
  • Document and take corrective actions when necessary
  • Take and document inventory monthly
  • Inspect all back-of-house products for proper labeling per SOP
  • Make final decisions on hiring new back-of-house team members
  • Lead culinary training and validation directed by Food Excellence/L&D
  • Train and develop BOH employees in NetMenu, operational standards, food safety, and workplace safety
  • Support GM with Personal Development Plans, Mid-Year and End of Year Reviews
  • Align with GM on financial initiatives through budget maintenance in food, labor, and operating costs
  • Maintain accurate financial records for variance calls
  • Support GM in meeting financial goals set by Area Manager
  • Oversee all catered events ensuring operational standards and catering guidelines are followed
  • Coordinate service, delivery, and display setup of events
  • Perform additional duties as needed
