Job Requirements
- Minimum 5 years of kitchen management or chef experience
- bachelor's or culinary degree preferred
- experience in high-volume retail, entertainment, hospitality, or restaurant venues required
- extensive banquet event experience
- experience managing and developing teams
- current ServSafe certification required
- ServSafe instructor certification or ability to be certified preferred

Job Duties
- Adhere to the company's mandated Food & Beverage menu and purchasing programs
- maintain budgeted revenue, costs of sales, labor, supplies, and operating cash flow related to food operations
- review monthly profit & loss statements and adjust as necessary
- work with Operations and Sales teams to plan, supervise, and execute all food and beverage events including preparation, service, and cleanup
- assist with cooking when needed
- estimate food consumption and make appropriate purchases
- efficiently schedule staff to meet business volume fluctuations
- recruit, hire, train, and retain kitchen staff including sous chefs and lead cooks
- develop key staff members
- ensure product quality, freshness, and presentation meet company standards
- supervise preparation, portioning, garnishing, and storage of all food
- facilitate and manage kitchen equipment maintenance
- conduct sanitation audits and cleaning schedules
- ensure compliance with local Department of Health regulations
- report critical issues to the General Manager
