Job Requirements

  • 5+ years of kitchen management or chef experience
  • Bachelor’s or culinary degree preferred
  • Experience in high-volume retail, entertainment, hospitality, or restaurant venue
  • Extensive experience in banquet-style events
  • Proven ability to manage and develop teams
  • Current ServSafe certification required
  • ServSafe instructor certification preferred or ability to obtain

Job Duties

  • Adhere to the company’s mandated Food & Beverage menu and purchasing programs
  • Maintain budgeted revenue, costs of sales, labor, supplies, and operating cash flow
  • Review monthly profit & loss statements and make necessary adjustments
  • Work with the Operations team and Sales staff to plan, supervise, and execute all events
  • Supervise preparation and service of all food and beverage including cleanup
  • Assist with cooking when needed
  • Estimate food consumption and make purchases according to food program
  • Schedule staff efficiently to accommodate shifts in business volume
  • Recruit, hire, train, and retain kitchen staff
  • Develop key staff including sous chefs and lead cooks
  • Ensure product quality, freshness, and presentation meet company standards
  • Oversee preparation, portioning, garnishing, and storage of all food
  • Manage all kitchen equipment maintenance
  • Conduct sanitation audits and cleaning schedules
  • Comply with all local Department of Health regulations
  • Report critical issues to the General Manager
