Job Requirements

  • Degree or certificate in Culinary Arts
  • One to two years’ experience as an Executive Chef
  • Availability to work varied schedule including holidays and weekends
  • Ability to stand for extended periods and perform physical tasks including lifting up to 50 pounds
  • Knowledge of MSDS and OSHA standards
  • Strong organizational skills
  • Commitment to sustainability practices

Job Qualifications

  • Degree or certificate in Culinary Arts
  • One to two years’ experience as an Executive Chef
  • Expertise in food product, presentation, quality and preparation
  • Strong knowledge of menu concept and design
  • Leadership and team management skills
  • Ability to develop new recipes and menu items
  • Familiarity with health and safety standards
  • Effective communication and interpersonal skills

Job Duties

  • Interview, select, train, schedule, coach and support associates in accordance with established brand or hotel standards and HHM core values
  • Establish priorities and assign production and preparation tasks to staff
  • Review daily menu specials, banquet event orders and inventory food items for daily use
  • Requisition day’s supplies and ensure proper receipt and storage
  • Ensure quality of products received
  • Meet with Executive Steward to review equipment needs, banquet assistance, cleaning schedule, and safety follow-up
  • Ensure kitchen work areas are stocked with specified tools, supplies, equipment and updated recipe cards, production schedules and plating guides
  • Ensure staff prepare menu items following recipes and yield guides
  • Develop new menu items, test and write recipes
  • Observe guest reactions and confer with service staff to ensure guest satisfaction
  • Conduct frequent walk-throughs of kitchen areas and direct personnel to correct deficiencies
  • Assist catering with special function menus and client meetings
  • Review sales and food cost daily and utilize excess items efficiently
  • Prepare weekly work schedules in accordance with labor cost guidelines
  • Follow sustainability guidelines related to EarthView program
  • Practice safe work habits, wear protective equipment and follow MSDS and OSHA standards
  • Perform other duties as requested by management
