Job Requirements

  • bachelor’s or culinary degree preferred
  • 5 plus years of kitchen management or executive chef experience
  • experience in high-volume retail, entertainment, hospitality, or restaurant venue
  • extensive banquet style event experience
  • experience managing and developing teams
  • current ServSafe certification
  • ability to perform physical activities such as walking, bending, standing for periods, and lifting with assistance

  • experience in high-volume retail, entertainment, hospitality, or restaurant venue required
  • extensive experience in banquet style events
  • experience managing and developing teams required
  • current ServSafe certification required
  • ServSafe instructor certification or ability to be certified preferred

Job Duties

  • adhere to the company’s mandated food and beverage menu and purchasing programs
  • maintain budgeted revenue, costs of sales, labor, supplies, and operating cash flow as it relates to food operations
  • review monthly profit and loss statements and make adjustments as necessary
  • work with the operations team and sales staff to plan, supervise, and execute all events including food and beverage preparation, service, and cleanup
  • assist with cooking when needed
  • estimate food consumption and make purchases accordingly
  • schedule staff efficiently to accommodate business volume shifts
  • recruit, hire, train, and retain kitchen staff including sous chefs and lead cooks
  • ensure product quality, freshness, and presentation meet company standards
  • supervise preparation, portioning, garnishing, and storage of all food
  • facilitate and manage kitchen equipment maintenance
  • implement and conduct sanitation audits and cleaning schedules to comply with local Department of Health regulations
  • report any critical health or safety issues to the General Manager
