Job Requirements
- Previous leadership experience in culinary fields
- possession of journeyman's papers or international equivalent preferred
- diploma certification in culinary discipline preferred
- comprehensive knowledge of classical, contemporary and international cuisine
- technical expertise in banquet food production and presentation
- proficiency in Microsoft Windows applications
- strong interpersonal and problem-solving abilities
- reliability and high responsibility
- capability to work under pressure in fast-paced environments

- ability to maintain calm and courteous demeanor focusing on guest needs
- physical ability to lift and carry under 20 lbs and pull over 20 lbs as part of duty

Job Duties
- Comply with Fairmont standards and regulations to ensure safe and efficient hotel operations
- offer professional, engaging and friendly service consistently
- lead an outstanding culinary team in a high volume, luxury hotel
- be innovative, detailed oriented, quality conscious and aware of new trends in presentation and preparation
- develop and prepare new signature items for the hotel and special functions
- plan and develop hotel menus considering product availability, food and service cost, marketing conditions and business volume
- assign prices for daily menus to achieve net profit
- supervise chefs in all phases of food production ensuring quality and consistency
- oversee daily activities including food preparation, sanitation, inventory receiving, reporting and food cost management
- review and approve weekly payroll
- support environmental initiatives by sourcing organic food options when possible
- attend Food & Beverage meetings, Banquet Event Order meetings and conduct monthly department meetings
- communicate any physical maintenance issues to engineering
- promote professional work habits of respect, integrity, teamwork and empowerment
- ensure department operation budget adherence and cost control
- hire kitchen colleagues and conduct new hire and annual performance reviews
- engage in ongoing employee training and development
- enforce fire prevention policies and hotel regulations
- seek opportunities to increase revenues
- perform other duties as assigned
