Job Requirements

  • 5+ years of kitchen management or chef experience
  • experience in high-volume retail, entertainment, hospitality, or restaurant venue
  • current ServSafe certification
  • ability to lead and develop kitchen staff
  • strong organizational and communication skills
  • knowledge of budgeting and profit & loss management
  • ability to work in a fast-paced, high-volume environment
  • willingness to adhere to local health and safety regulations

Job Qualifications

  • 5+ years of kitchen management or chef experience
  • bachelor's degree or culinary degree preferred
  • experience in high-volume retail, entertainment, hospitality, or restaurant venue required
  • extensive experience in banquet style events
  • experience managing and developing teams required
  • current ServSafe certification required
  • ServSafe instructor certification or ability to be certified preferred

Job Duties

  • adhere to the company's mandated food & beverage menu and purchasing programs
  • maintain budgeted revenue, costs of sales, labor, supplies, and operating cash flow related to food operations
  • review monthly profit & loss statements and make adjustments as necessary
  • work with the operations team and sales staff to plan, supervise, and execute all events, supervising food and beverage preparation, service, and cleanup
  • assist with cooking when needed
  • estimate food consumption and make purchases as appropriate
  • schedule staff efficiently to match business volume shifts
  • recruit, hire, train, and retain kitchen staff including sous chefs and lead cooks
  • develop key staff
  • ensure product quality, freshness, and presentation meet company standards
  • supervise preparation, portioning, garnishing, and food storage
  • manage kitchen equipment maintenance
  • conduct sanitation audits and cleaning schedules
  • comply with local Department of Health regulations
  • report critical issues to the General Manager
