Job Requirements
- 5+ years of kitchen management or chef experience
- experience in high-volume retail, entertainment, hospitality, or restaurant venue
- current ServSafe certification
- ability to lead and develop kitchen staff
- strong organizational and communication skills
- knowledge of budgeting and profit & loss management
- ability to work in a fast-paced, high-volume environment
- willingness to adhere to local health and safety regulations
Job Qualifications
- 5+ years of kitchen management or chef experience
- bachelor's degree or culinary degree preferred
- experience in high-volume retail, entertainment, hospitality, or restaurant venue required
- extensive experience in banquet style events
- experience managing and developing teams required
- current ServSafe certification required
- ServSafe instructor certification or ability to be certified preferred
Job Duties
- adhere to the company's mandated food & beverage menu and purchasing programs
- maintain budgeted revenue, costs of sales, labor, supplies, and operating cash flow related to food operations
- review monthly profit & loss statements and make adjustments as necessary
- work with the operations team and sales staff to plan, supervise, and execute all events, supervising food and beverage preparation, service, and cleanup
- assist with cooking when needed
- estimate food consumption and make purchases as appropriate
- schedule staff efficiently to match business volume shifts
- recruit, hire, train, and retain kitchen staff including sous chefs and lead cooks
- develop key staff
- ensure product quality, freshness, and presentation meet company standards
- supervise preparation, portioning, garnishing, and food storage
- manage kitchen equipment maintenance
- conduct sanitation audits and cleaning schedules
- comply with local Department of Health regulations
- report critical issues to the General Manager
