Job Requirements
- High school diploma or equivalent
- minimum 5 years experience as an Executive Chef or similar role
- extensive knowledge of hotel banquet culinary operations preferred
- ability to stand for extended periods
- ability to perform reaching, stooping, and crouching motions
- manual dexterity for handling kitchen tools
- good visual acuity including closeness and depth perception
- good sense of smell and taste
- ability to work in a fast-paced kitchen environment
- closed toe, non-canvas, and non-skid shoes required
- ability to maintain professionalism and grooming standards
- excellent communication and leadership skills
- capacity to work with a diverse kitchen team and manage multiple tasks efficiently
Job Qualifications
- Proven record of culinary accomplishments with personal recognitions
- basic reading, writing, mathematical, and computer skills
- minimum 5 years high-volume cooking experience preferably in hotel banquet operations
- at least 5 years experience as an Executive Chef in a hotel or fine dining restaurant
- strong interpersonal, verbal, and written communication skills for culinary training
- effective leader, trainer, and motivator of staff
- even-tempered with a reputation for consistency and fairness
- organized with the ability to meet deadlines
- good judge of people and situations
- able to handle many details and heavy volume of events
- neat, well-groomed, and highly professional
- exceptional guest and customer service skills
- restaurant pre-opening experience is a plus
Job Duties
- Review and approve recipe files and discuss improvements with culinary staff
- use high-quality food items prepared creatively and cost-effectively
- review and approve food orders from central commissary as required
- frequently inspect finished products for quality before leaving kitchen
- oversee kitchen appearance, cleanliness, and safety
- ensure all kitchen equipment is properly maintained and meets health standards
- troubleshoot unexpected kitchen issues
- properly dispose of kitchen waste
- manage menu creation, production, and ordering for special events
- price menu, catering, and seasonal items according to food and cost control guidelines
- develop and approve seasonal specials and pastry items
- schedule and conduct product taste panels with Food and Beverage Management
- participate in culinary events and competitions
- ensure food costs meet budgetary goals through purchasing, storage, and waste control
- review daily food cost reports with kitchen and F&B staff
- maintain and update invoice coding and pricing weekly
- manage kitchen payroll in line with forecasts and budget
- interview, hire, and adjust kitchen staffing
- prepare weekly schedules to meet forecasts and budgets
- train, develop, and motivate culinary staff to uphold food preparation standards
- provide leadership and a positive work environment
- delegate responsibilities to develop supervisors and subordinates
- cooperate with management team and complete assigned projects timely
- maintain company grooming standards and wear provided uniform
