Job Requirements
- Minimum of five years of food production experience preferably in hotel or country club setting
- prior purchasing experience required
- prior leadership experience strongly preferred
- degree or certification from a culinary school required
- management coursework preferred
- Serve-Safe Certification
- must provide proof of COVID-19 vaccination or approved exemption
- ability to work weekends and holidays
- strong communication skills
- adherence to health and safety regulations
- capability to maintain confidentiality and report compliance issues
- physical ability to perform kitchen duties safely
- valid work authorization.

Job Duties
- Ensure that residents and members receive nutritionally prepared, wholesome meals
- supervise and delegate responsibilities for daily food production for the main dining room, Health Center dining room, and employee meals
- coordinate with the Sous Chef & Garde Chef the daily needs of supplies for purchasing and planning of menu items
- ensure culinary team complies with Federal, State, and local standards, guidelines, regulations, and the established policies and procedures of The Cypress of Hilton Head including cleanliness and sanitation
- maintain compliance with the State Health Department regarding storage, sanitation, container identification, and labeling and dating of products
- prepare and direct the preparation of all food served following standard recipes and special diet orders
- ensure cleaning and closing checklists are completed after each shift
- assign and monitor continual cleaning schedules in coordination with the Sous Chef/Garde Chef
- assist in closing responsibilities ensuring job functions are completed according to policies and regulations
- provide feedback on employee productivity and areas of concern and recommend solutions
- manage employee scheduling to maximize productivity and minimize overtime
- maintain employee training and education schedules for new food service production employees
- update menu recipe changes
- plan and execute menu items, special events, and holiday offerings
- provide weekly menu information from monthly rotations
- monitor function sheets for timely completion
- place food orders through approved vendors staying within budget
- manage monthly expenses, cost containment, and budget adherence
- provide leadership and management to the culinary team
- work weekends and holidays as required
- attend in-service programs and leadership meetings
- report suspected compliance violations appropriately
- comply with injury reporting guidelines
- maintain confidentiality of member information

- conduct interviews for employment candidates
- complete timely employee performance evaluations
- promote food safety
- participate in required drills
- conduct periodic sanitation audits
- establish standardization of recipes, portion control, cost control, and production
- maintain records and reports

- assist in emergency situations as needed
- complete all other assigned tasks.
