Job Requirements

  • Minimum of five years of food production experience preferably in hotel or country club setting
  • prior purchasing experience required
  • prior leadership experience strongly preferred
  • degree or certification from a culinary school required
  • management coursework preferred
  • Serve-Safe Certification
  • must provide proof of COVID-19 vaccination or approved exemption
  • ability to work weekends and holidays
  • strong communication skills
  • adherence to health and safety regulations
  • capability to maintain confidentiality and report compliance issues
  • physical ability to perform kitchen duties safely
  • valid work authorization.

Job Duties

  • Ensure that residents and members receive nutritionally prepared, wholesome meals
  • supervise and delegate responsibilities for daily food production for the main dining room, Health Center dining room, and employee meals
  • coordinate with the Sous Chef & Garde Chef the daily needs of supplies for purchasing and planning of menu items
  • ensure culinary team complies with Federal, State, and local standards, guidelines, regulations, and the established policies and procedures of The Cypress of Hilton Head including cleanliness and sanitation
  • maintain compliance with the State Health Department regarding storage, sanitation, container identification, and labeling and dating of products
  • prepare and direct the preparation of all food served following standard recipes and special diet orders
  • ensure cleaning and closing checklists are completed after each shift
  • assign and monitor continual cleaning schedules in coordination with the Sous Chef/Garde Chef
  • assist in closing responsibilities ensuring job functions are completed according to policies and regulations
  • provide feedback on employee productivity and areas of concern and recommend solutions
  • manage employee scheduling to maximize productivity and minimize overtime
  • maintain employee training and education schedules for new food service production employees
  • update menu recipe changes
  • plan and execute menu items, special events, and holiday offerings
  • provide weekly menu information from monthly rotations
  • monitor function sheets for timely completion
  • place food orders through approved vendors staying within budget
  • manage monthly expenses, cost containment, and budget adherence
  • provide leadership and management to the culinary team
  • work weekends and holidays as required
  • attend in-service programs and leadership meetings
  • report suspected compliance violations appropriately
  • comply with injury reporting guidelines
  • maintain confidentiality of member information

  • conduct interviews for employment candidates
  • complete timely employee performance evaluations
  • promote food safety
  • participate in required drills
  • conduct periodic sanitation audits
  • establish standardization of recipes, portion control, cost control, and production
  • maintain records and reports
  • serve and portion food during meal service as needed
  • maintain standards for personal appearance and cleanliness
  • assist in emergency situations as needed
  • complete all other assigned tasks.
