Job Requirements

  • culinary education of at least 2 years preferred
  • minimum of 3-5 years in a similar senior culinary role
  • advanced understanding of food preparation standards
  • expertise in human resources management
  • proven experience with back-of-house operations and inventory control
  • excellent communication and deadline management
  • flexible availability including weekends, nights, holidays, and on-call shifts
  • proficiency in Microsoft Office applications
  • ability to learn new systems quickly
  • experience with bar operations is a plus
  • must be eligible to obtain Kentucky gaming and racing license

Job Qualifications

  • 2+ years culinary education preferred
  • 3-5+ years experience in a similar executive chef position
  • advanced knowledge of professional food preparation principles and practices
  • proficient human resources management skills
  • excellent knowledge of back-of-house systems, ordering, and inventory
  • strong communication skills
  • ability to meet deadlines
  • proficiency in Microsoft Outlook, Excel, and Word
  • aptitude for learning automated inventory and purchasing systems
  • experience or involvement with bar operations preferred
  • ability to obtain and maintain a valid Kentucky gaming and racing license

Job Duties

  • Plan and direct food preparation and culinary activities consistent with the brand and annual plan
  • ensure high quality food and beverage to guests while maintaining cost effectiveness
  • maintain cleanliness and organization of the kitchen
  • emphasize food diversity and quality in preparation
  • direct and manage culinary and stewarding staff
  • develop new recipes, plan menus, and handle administrative tasks
  • train staff on safe operation of equipment and cooking procedures
  • establish and review staffing levels, delegate duties to team members
  • enforce company policies, safety, and health regulations
  • monitor service standards, ticket times, and production schedules
  • establish recipes and ensure proper execution
  • develop prep and production schedules
  • control food costs, purchasing, portion control, and waste management
  • establish maintenance schedules for kitchen equipment
  • develop annual budgets and business plans
  • coordinate with staff on menu improvements and pricing
  • collaborate with marketing on events and promotions
  • maintain relationships with property management and vendors
  • obtain feedback on food and service quality and resolve customer complaints
  • perform other assigned duties
