Job Requirements

  • 5+ years of kitchen management or executive chef experience
  • bachelor's or culinary degree preferred
  • experience in high-volume retail, entertainment, hospitality, or restaurant venue required
  • extensive experience in banquet-style events
  • experience managing and developing teams
  • current ServSafe certification required
  • ability to work in a fast-paced, high-volume environment
  • ability to walk, bend, stand for periods
  • may lift objects with assistance

Job Qualifications

  • current ServSafe certification required
  • ServSafe instructor certification or ability to be certified preferred

Job Duties

  • adhere to the company's mandated f&b menu and purchasing programs
  • maintain budgeted revenue, costs of sales, labor, supplies, as well as operating cash flow related to food operations
  • review monthly profit & loss statements and make necessary adjustments
  • work with operations and sales teams to plan, supervise, and execute all events including food and beverage service and cleanup
  • assist with cooking when needed
  • estimate food consumption and make purchases as appropriate
  • schedule staff efficiently based on business volume
  • recruit, hire, train, and retain kitchen staff including sous chefs and lead cooks
  • ensure product quality, freshness, and presentation meet company standards
  • supervise preparation, portioning, garnishing, and storage of food
  • manage kitchen equipment maintenance
  • conduct sanitation audits and cleaning schedules to comply with local health regulations
  • report critical issues to the General Manager
